On some projects, I've done up to 200 trials to find the right flavour pairing. Why? Because functional ingredients, marine collagen, plant proteins, adaptogens, all behave differently. What masks bitterness in one base might amplify fishiness in another.

Step 1

Discovery & Understanding Your Base

We start with a deep-dive consultation where I learn about your product base, your functional ingredients, and your target consumers. Then I'll do in-house trials with your product base to understand exactly what we're dealing with:

Is it bitter? Earthy? Fishy? Marine?
Where are the off-notes coming from?
What flavour pairings will actually mask these unwanted notes?

This is where my food science background really comes in.

Outcome: A clear flavour pairing strategy tailored to YOUR specific base and functional ingredients.

Step 2

Workshop

We run a structured workshop where we taste your current base, benchmark similar products, and map out which flavour profiles might work.

Outcome: A comprehensive Flavour Brief that becomes your North Star. 

Step 3

Flavour Sourcing & Trials

Now I know what we're working with, I source the right flavouring suppliers and get to work running trials.

I'm testing different flavour directions at different dosages, looking at how they mask (or don't mask) those unwanted notes, and shortlisting the best options for you to taste.

This is where I really dig in. I'm not stopping at 5 samples. I'll do 50, 100, even 200 trials if that's what it takes to find flavour pairings that actually work.

Outcome: Shortlisted flavour directions that mask the unwanted notes and fit your target consumers.

Step 4

Custom Flavour Language Training

Before we taste together, I train you and your team in objective tasting language.
No more "I like it" or "this tastes weird" — we're focusing on actual characteristics:

Is it bitter or earthy?
Is it fishy or marine?
Does the flavour mask the off-notes or amplify them?
Is it balanced or is one note overpowering?

This training changes everything. Suddenly, you can articulate what you're tasting and make informed decisions.

Step 5

Guided Tasting Rounds

We run 3 in-person tasting sessions where I walk you through each sample, help you describe what you're tasting, and guide you to the right decision.
I'm there to help you understand:

Which flavour is masking the bitterness best?
Which one feels too artificial vs natural?
Which direction fits your target consumers' expectations?

Then I tweak the formulation based on your feedback — up to 2 rounds of amendments included. 

Outcome: A validated flavour direction that you're confident will work.

Step 6

Scale-Up Support

Once you've chosen your flavour, I stay with you through the industrialisation process.
Scaling up always changes things — sweetness, intensity, how well the flavour masks those off-notes. I do 2 post-scale-up tastings and make final tweaks so your product tastes great in production.
